My favorite season is upon us. The weather has cooled and the leaves are turning into a perfect portrait of colors. Fall also means harvest has started in our little town. The combines and grain carts have made their appearances in the fields. The littles are back in school and for many of you, back into their after school activities. This means we are all on the go and having quick easy dinners on the table is a must!
Often, I put in 11 hour days at the office; when I get home, my contribution to harvest is to keep the hubby and father-in-law fed. Over the years, I have struggled to come up with a list of go-to recipes for this time of year. For us, having a cattle business along with our grain business is a blessing. It means I always have something on hand I can stick in the crockpot for quick meals.
In the past few weeks, we made beef stew, roast, chili, and cube steak in the crockpot (recipes below).
We also sell soup bones, also known as osso buco, which have a reputation for contributing to gut health, aiding in sleep, providing a host of vitamins and minerals, protecting your joints, fighting osteoarthritis, and supporting weight loss. They are sooooo simple to make; all you have to do is throw them in a crockpot, add 1 ounce of vinegar, and one gallon of water. Cook for 10-24 hours and let it cool. You can use cheesecloth to strain. Store it in small containers in the freezer and heat as needed. They make a great breakfast broth (Johnson 2018).
Beef Stew:
Ingredients:
One can of diced tomatoes
One bag of frozen vegetable soup mix (I get mine from Kroger)
One package of Buckeye Valley Beef Stew Meat
3 beef bouillon cubes
Season with oregano, salt and pepper
Directions:
1. Add all ingredients to the crockpot
2. Cook on low for 8 hours
Roast:
Ingredients:
Buckeye Valley Beef Roast (2-3 pounds)
Half a bag of baby carrots
1 medium sweet onion diced
1 bag of petite red potatoes (Kroger sells them)
4-5 celery stalks diced
Season as desired
Directions:
1. Add all ingredients to the crockpot
2. Cook on low for 8 hours
Chili
Ingredients:
Buckeye Valley Beef Ground Beef (1 pound for every 2 people in your family)
1 can of diced tomatoes
1 can of tomato paste
1 can of chili beans
1 can of kidney beans
1 package of chili seasoning mix
Season with cinnamon (yes, that is the Cincinnati way!), salt, pepper, garlic, fennel, marjoram, thyme, rosemary, savory, sage, oregano, basil (I use a premix called Farm Dust which you can buy on Amazon)
Directions:
1. Add all ingredients to the crockpot
2. Cook on low for 8 hours
Crockpot Cube Steak
Ingredients:
Buckeye Valley Beef Cube Steak (one pack for every 2 people in your family)
1 can of cream of mushroom
1 package of onion mix (dry in envelope)
¾ c water
Salt and pepper to taste
Directions:
1. Add all ingredients to the crockpot
2. Cook on low for 8 hours
3. Serve with mashed potatoes and use the sauce as gravy!
