Christmas Prime Rib Roast
I know it is difficult to walk away from your traditional fixings, but hear me out. Turkey gets the highlight for Thanksgiving; ham for Easter. What about Christmas? Do you do ham, chicken, another turkey? If you are like my family, and you haven't yet settled on a traditional main course, you need to try Prime Rib! It is essentially ribeyes in a roast form. To cook it, all you have to do is apply your favorite rub and roast!

Prep

  1. Defrost your Prime Rib. We lay it out in the fridge several days before we plan to cook it. If you need it thawed faster, you can lay it out in cool water in your sink for a few hours (I would still recommend doing this the day before). 
  2. Determine the weight of the roast. Generally, ours are between 2 to 3 lbs. This will determine your cooking time. 

Day Of

  1. Two hours before cooking, bring your roast out of the fridge and place in a roasting pan, fat side up. You can use a roasting rack or if your roast is bone-in, you can rest on the ribs. 
  2. Mix salt, garlic powder, black pepper, and your favorite rub in a small bowl. Rub the blend all over the roast, ensuring your have an even coat. Let the roast sit at room temperature for two hours. 
  3. Preheat the oven to 500°F about 30 mins before cooking. Determine your cooking time by multiplying the weight of your roast by 5. So if it weighs 3 lbs, it will cook for 15 minutes; 2 lbs will cook for 10 minutes. 
  4. Place the roast in the preheated oven for your calculated time. 
  5. When the timer goes off, turn off the oven, and set the timer for two hours. NO PEEKING. NO opening the oven door. Trust me. This allows the roast to continue to cook and rest. 
  6. After two hours, check the roast with an internal thermometer. We like to cook ours to 130-135°F for medium rare. If needed, turn the oven back on to 375°F and cook until the desired temperature is reached. 
  7. Let the roast rest for 15 minutes before carving.
