Mississippi Chuck Roast
This is my favorite quick, easy, and "splurge" meal. I call it a splurge because the ingredients aren't all that good for you (the packets). I am sure you can find alternatives to these packets online, but that defeats the easiness part of it. This truly is a "set it and forget it" recipe that requires very little ingredients. It's always a guarantee crowd pleaser, too. On a cool and rainy October day like this one, I can't wait to be greeted by the smells of my crockpot tonight when I get home.

Christmas Morning Breakfast Sausage Casserole
This is the closest iteration I can find from the casserole my grandma used to make us when my sister's and I would stay the night. My dad also made some variation of this dish every Christmas morning. It is so versatile, you can substitute almost any protein, cheese, or veggie in it. It can feed an entire army of people, if you are hosting, or your family for several mornings so you can relax on the couch and drink that coffee for a few minutes in peace before the chaos.

Christmas Goetta
Eric's grandma passed this recipe on to all of her kids. Each year, Eric's mom cooks this up and freezes it in the bread pans, wraps in butcher paper, and gifts a few pounds to both her kids.
